About Us

Nicole has spent more than 20 years studying nutrition and exploring the relationship between food, metabolism, hormones, and health.

Her eclectic background includes work at a major consumer publication, a government agency, an obesity research nonprofit, an integrative health clinic, and a holistic fertility center. She earned her undergraduate degree in Journalism from Syracuse University, her master’s degree in Nutrition Communication from Tufts University, and completed her dietetic training through Virginia Tech.

Over the years, she’s become increasingly interested in the fundamentals of human physiology. Rather than chasing the latest nutrition trends, she focuses on understanding why the body is struggling and what it needs to function better.

Her own experiences navigating Hashimoto’s disease, endometriosis, and eczema helped shape her interest in metabolic health and the interconnected nature of our body’s systems.

Nicole is particularly passionate about energy production, hormonal health, digestion, liver function, environmental influences on health, and the ways our daily habits affect our physiology.

She believes nutrition should be liberating, not restrictive. Her recommendations are grounded in research, physiology, cultural and historical context, individual needs, and common sense. Above all, Nicole loves helping people connect the dots and understand the why behind their symptoms.

Outside of work, she lives on a 33-acre working farm in Washington County, Maryland, with her husband and three children. Together, they run Purifying Pastures, a farm food delivery service.

Courtney Lehman, MS, RD, LDN
Registered Dietitian

Courtney’s path to becoming a dietitian began in primary care. She earned her undergraduate degree in Biobehavioral Health from Penn State University, originally intending to become a Physician Assistant. After several years working alongside physicians and caring for patients, she became increasingly interested in the role nutrition and lifestyle play in preventing and managing chronic disease.

That interest led her to pursue a Master of Science in Nutrition and Dietetics from Grand Canyon University. She also completed six months of clinical training at Whole Health RD, where she had the opportunity to learn alongside Nicole before joining the practice as a registered dietitian.

Courtney believes health is about much more than what we eat or how often we exercise. Our physical, mental, emotional, and spiritual well-being are all connected, and she believes meaningful improvements in health begin with considering the whole person. Her background in primary care and experience as a group fitness instructor have reinforced the importance of meeting people where they are.

When working with clients, her first priority is listening. Everyone has a unique health history, lifestyle, challenges, and goals. She wants to understand those pieces before developing a plan that feels realistic and sustainable.

She also believes food is meant to be enjoyed! Caring for your health shouldn’t mean giving up the foods, traditions, and experiences you love.

Outside of work, Courtney is a wife, a dog mom to her golden retriever, Goose, and a follower of Christ. Her faith is an important part of her life. She loves baking sourdough bread, experimenting with new recipes, cooking for family and friends, and enjoying a good cup of coffee.

Our Philosophy: Fix the System, Not Just the Symptoms

There is no shortage of nutrition advice. Every month brings another diet, superfood, supplement, or study promising better health.

But the fundamentals of human physiology don’t change nearly as quickly as nutrition headlines.

At Whole Health RD, we focus on understanding the systems that influence how you feel and function, including metabolic health, hormone regulation, digestion, sleep, stress, and physical activity.

Metabolism is often reduced to how quickly someone gains or loses weight. In reality, metabolism encompasses the countless chemical processes that keep us alive. It influences how we produce energy, recover, regulate hormones, and maintain healthy tissues.

Rather than simply asking which foods are good or bad, we ask: How is your body functioning, and what does it need?

We believe in nourishing the body rather than constantly restricting it, supporting healthy physiology rather than chasing symptoms, and creating sustainable habits rather than temporary fixes.

Most importantly, we believe you deserve to understand your health. You don’t need another set of rules. You need a map!
